12 defrosted Slim Stack pancakes
12 large eggs
1 cup turkey sausage or bacon crumbles (or, your favorite breakfast meat)
1 cup shredded mild cheddar cheese
Cracked black pepper
Maple Butter Sauce
1/2 cup real maple syrup
1/4 cup salted butter (melted and cooled)
Preheat oven to 350 degrees. Liberally coat muffin tins with non-stick cooking spray. Wet fingertips. Firmly press defrosted Slim Stack pancakes into each tin.
Place one tablespoon of bacon or sausage crumbles into each Slim Stack covered tin. Crack an egg on top of the crumbles. Sprinkle a small pinch of salt and pepper onto each egg. Sprinkle a tablespoon of cheese onto each egg. Bake for 10-12 minutes for a runny egg yolk. For a firm yolk, bake for 16-18 minutes.
Whisk together real maple syrup and unsalted butter. Allow Stack Cups to cool 5 minutes. Carefully remove each muffin from the tins.With a fork, drizzle maple butter sauce onto each Stack Cup. Enjoy!
